Job Description Summary

Responsible for creating, preparing and improving recipes for baked goods such as pastries, breads, doughs and desserts. Ensures quality controls and recipe standardization are following approved standards. Monitors and enforces food sanitization and safety standards.

Essential Duties & Responsibilities (other duties may be assigned)

1. Produce pastries, doughs, and bakery goods as directed by production sheets
2. Produce bakery and pastry items according to standardized recipes
3. Interpret and scale recipes and production as directed
4. Keeping accurate production records
5. Decorates cakes and pastries for presentation
6. Weigh, sift, measure and mix baking ingredients, add shortenings, yeast, leavening agents and seasonings to prepare baked goods and pastries
7. Prepares baked goods from scratch including but not limited to quick breads, pizza dough, cookie dough, cakes, pies, bars and cakes
8. Maintain consistency in product quality, appearance, quantity and ensure product is prepared on schedule.
9. Ensures cleanliness, safety and sanitation in designated storage and work areas
10. Interacts with customers in a friendly manner
11. Participate in any training necessary to accommodate changes in operation which directly affect regular assigned duties.
12. Conduct daily, weekly, or monthly physical inventories in designated areas as assigned by supervisor.
13. Apply safety-related knowledge, skills, and practices to everyday work.
14. Follow all written and oral safety instructions.
15. Commit to learning about continuous improvement strategies and applying them to everyday work. Actively engage in University continuous improvement initiatives.

Required Education, Certifications, Licensures (minimum requirements)

• High School diploma, or an equivalent combination of education and experience from which comparable knowledge and abilities can be acquired.
• Serv-Safe Certified or the ability to obtain a Serv-Safe certificate within 6 months of employment.

Required Experience (minimum requirements)

• Two years’ experience with baking and baking production in a high-volume bakery operation
• Two years of customer service experience.

Desirable Education and/or Experience

• Certified in ServSafe or other comparable food safety certification

Required Knowledge, Skills, and/or Abilities (minimum requirements)

• Demonstrated ability to learn and follow instructions.
• Possess a valid driver’s license and meet Michigan Tech University’s vehicle use requirements
• Excellent interpersonal, customer service and written/oral communication skills
• Demonstrated ability to work independently.
• Demonstrated ability to investigate and solve complex problems
• Demonstrated ability to independently organize and prioritize work assignments in a complex work environment.
• Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, fractions and decimals.
• Demonstrated ability to read and interpret recipes relative to quantity, consistency, and composition of all menu items assigned to the department.
• Knowledge of bakery products
• Knowledge of bakery chemistry
• Demonstrate the ability and knowledge to properly quantify recipes
• Demonstrate the ability and knowledge of product yields
• Demonstrate the ability to decorate cakes, pastries and baked goods
• Demonstrate the ability and knowledge to use proper baking techniques
• Knowledge of safe food handling procedures and storage practices
• Demonstrated ability to work with accuracy and attention to detail
Demonstrated ability to work effectively with frequent and multiple interruptions
Demonstrated ability to be flexible and detailed–oriented in a changing environment.
• Ability to effectively present information in one –on –one situation to staff and customers.
Ability to regularly lift 50 pounds of weight and occasionally lifting up to 100 pounds of weight
• Demonstrated commitment to contribute to a safe work environment
• Demonstrated ability to communicate effectively across cultural boundaries and work harmoniously with diverse groups of students, faculty, and staff.

Work Environment and/or Physical Demands

  • Standing, kneeling and stooping long periods of time. Regularly lifting and or moving 50 pounds of weight and occasionally lifting and or moving 100 pounds of weight.

Required Training and Other Conditions of Employment
